HANDLING TIPS
It comes whole fillet about 2kg +/-. You cannot finish so much at once?

1, Cut into 5-6 portions.

2, Pat dry it with kitchen paper. - Lion Leed paper has better absorption and used by many sushi chef.

3, Wrap each portion with cling wrap.
Recommend to put it in Zip lock for extra protection from exposure of air.

4, Store in freezer.

Storage instructions: 

Consume as sashimi: Up to 3 days in chiller. Upon receiving the salmon fillet, immediately cut the fillet into smaller portions & pack into individual ziploc bag & freeze it. You can store the frozen salmon for up to 2-3 months. You can defrost & still consume as sashimi. However, if anytime, you feel that the salmon is not suitable for sashimi, simply cook it! 
Note: Once defrosted, please consume as soon as possible. (Do not re-freeze after thawed).
