Madai is a white fish with translucent, firm flesh. It has a plump, chewy texture.
When bitten into, it has just the right firmness and stickiness, providing a clean break with a rich flavor.
Madai mainly feeds on shrimp, so its flesh lacks any unpleasant odor.
- This is the Loin which means that all the bones have been removed & trimmed.

- Simply defrost in chiller overnight, dab dry the madai fish with kitchen towel (or “LION” Leed paper - Special Kitchen Towel). *Do not wash & cut into thin slices.
Serve with sashimi soy sauce + wasabi or marinate with Kaisendon sauce.
Packaging: 300-400g per packet (3-4pax assuming 100g / pax or up to 6 pax if consuming other food as well)

Storage Instructions: Keep frozen.
Recommended to defrost in chiller overnight before use.
Do not defrost in room temperature outside of fridge or in sink (“common practice”). Once defrosted, consume fast within same day or next day.
How to prepare: After defrost, dab dry with “LION” Kitchen Towel (Recommended) & then cut into thin slices with sharp knife.
Suggested uses: Sashimi, Sushi, Maki sushi roll, Kaisen-Don, Chirashi, or simply add to your salad bow mix.
