Shiro Dashi is a soup base made from bonito, kombu dashi, soy sauce, mirin and sugar.
It's often used by professional chefs but it's useful in the home too.
It's suitable for making Chawan mushi (Japanese steamed egg), Dashimaki tamago (Japanese omelette), Udon, Oden, and more!

Basic ratio of Shiro Dashi for varies of Japanese dish
(Dashi : Water/Hot water)

Oden 100ml : 1100ml (4 pax)

Hot Pot 70ml : 700ml (4 pax)

Udon Soup (Kakejiru Osuimono) 30ml : 270ml (1 pax)

Soup 30ml : 400ml (3 pax)

Chawanmushi (Steamed Egg) 30ml : 360ml (2 eggs)

Dashimaki (Rolled Omelette) 10ml : 50ml (3 eggs)

Cooked with Rice 10ml : 45ml to 2 cups of rice and add water up to the 2 cup mark.

Zuke Sashimi  60ml: 45ml (for about 300g sashimi)
